I made this last night for dinner club and i've made it a few times in the past. I always like to share a new discovery and since most, if not all of you have given up on my recipe blog, I thought I'd post it here...
Nordstrom Café Tomato Basil Soup
Ingredients:
(2) 28 oz. cans whole peeled tomatoes, undrained
1 lb. carrots, chopped
1 lb. onion (I used yellow), chopped
2-3 T fresh basil
1/3 C olive oil
5 C water
5 tsp chicken base
1 pint heavy cream
1 1/3 tsp. salt
1 1/3 tsp. pepper
Sute carrots and onions in olive oil for 15 minutes. Add tomatoes, basil chicken stock (dissolved in the water) and simmer for 45 minutes. Puree in the blender in batches while adding cream. Return to pot. Heat. Serve.
I like to serve it with parmesan cheese and toasted bagettes
