ReCiPe

Below is a recipe for Salmon...I serve this at Dinner Club and some of the girls asked for the recipe. I think it turned out pretty good...

Macadamia-crusted Salmon (Red Rock Brewing Company)

For the Glaze:

2 egg yolks
1 C Dijon Mustard
1/2 C Champaign (I used white wine?)
1 oz. minced shallots
8 oz. (by weight) honey
1 qt. Salad oil (I used 1 1/2 C)
Salt and pepper to taste

(This makes a lot of glaze--you could half the recipe)

For the fish:
4 Salmon fillets or steaks
2 eggs
1 C milk
1 C macadamia nuts, chopped fine
1/2 C flour
4 T vegetable oil
Green onions, chopped for garnish

For the glaze: In a mixer, combine egg yolks, mustard, champaigne, shallots and honey. Slowly add oil in a stream to emulsify dressing. Add salt and pepper to taste.

For the fish: Beat the eggs with milk. Dredge Salmon in flour, dip in egg mixture, then roll in crushed nuts. Heat oil in a pan over medium heat. Saute fish for about 3-4 min. on each side until lightly brown crust. Brush with glaze. Finish under broiler until glaze bubble. Garnish w/ green onions.
